A fab way to start the day, use our firm or medium tofu for best results.
Mash the tofu using a fork leaving some larger chunks.
Mix together the nutritional yeast, turmeric, smoked paprika and Dijon mustard with the soya milk to make a paste and stir in the tofu. Allow the flavours to mingle for 10 minutes.
Heat the oil in a frying pan and add the tofu, stir fry for a couple of minutes to lightly brown making sure the tofu retains some of the larger chunks and cook until the tofu has absorbed the sauce.
Season and stir in the chopped chives, if using. Serve with sliced avocado and grilled tomatoes.
