Though avocado, the main ingredient in guacamole, contains healthy fats, it is also fairly high in calories. To make a healthier version of guacamole, you will need: 1 package well drained soft tofu, 2-3 ripe and peeled avocados, 2 cloves finely minced garlic, 1 tbsp. lemon juice, ¼ chopped red onion, 2 small finely chopped tomatoes, ½ tsp. cumin, 2 tbsp. fresh chopped coriander, salt, and pepper.
First, blend the tofu, avocado, onion, garlic, cumin, and lemon juice in a blender or food processor. Once the mixture is creamy, move to a bowl and mix in the tomatoes and coriander. Sprinkle with salt and pepper; then refrigerate for at least half an hour. Remove from the refrigerator and serve with tortilla chips or crackers.
