Smoked Tofu with Pesto & Spelt Spaghetti

 300 g Dry spelt spaghetti
 1 tbsp Olive oil
 300 g Dragonfly Smoked Tofu, cut into cubed
 1 Large courgette, sliced
 150 g Jar of vegan or vegetarian green pesto
To serve
 Fresh basil leaves

Ingredients

Directions

Cook the spaghetti as directed on the pack

Meanwhile, heat the oil in a pan and the tofu cubes and courgette, then stir fry for about 5 minutes or until the tofu is brown.

Drain the pasta and stir in the cooked tofu and courgette with the pesto.

Serve in warm bowls with fresh basil
