A versatile dish, perfect as a starter or accompaniment to a main meal, Dragonfly’s marinated tofu served with a crispy green salad.
1 bag of mixed baby salad leaves
4 celery sticks (sliced)
1 green pepper (seeded removed and cut into strips)
1/2 cucumber (sliced)
200g Dragonfly Premium marinated tofu (cubed)
1 spring onion (chopped)
1tbsp balsamic vinegar
2 tbsp olive oil
1/2 clove of crushed garlic
lemon juice and pepper to taste
fresh herbs (chopped)
1) Fry the tofu in a pan for a few mins on each side until brown. Cut into cubes or strips.
2) Divide the lettuce up between 4 tea plates and then add the other ingredients.
3) Mix the vinegar, oil, lemon juice, garlic and pepper together and drizzle over the salad.
4) Sprinkle with fresh herbs and serve.
Tip: double up on the ingredients to make a main course salad.
