This super simple recipe makes an awesome lunchtime snack or an evening meal, perfect prep for your Zumba dance class!

Baked Tofu and Salsa

Yields2 Servings

 300 g Dragonfly Medium Tofu
 4 Large tomatos
 Half a cucumber
 Small bunch of spring onions
 Oil for frying
For the dressing
 Juice of a lemon
 4 tbsp Olive oil
 1 tbsp Cajun spice mix
 1 tbsp Honey
 Salt and pepper

Ingredients

Preheat the oven to 200C Gas 6.

Cut the tofu into slices and in half again to make squares. Place on a baking sheet and bake for 15 minutes.

Meanwhile chop the tomatoes and cucumber into chunks and slice the spring onion.

Toss together the dressing ingredients and stir through the tomato mixture.

To finish the tofu, heat a large griddle pan and add a little oil. Pan fry the baked tofu on both sides until browned.

Serve the salsa in bowls topped with the warm tofu.
